I’ve have wanted to include some not work related posts on the blog, and thought that dinner tonight was a good chance to do so.
So here’s an easy recipe for boneless leg of lamb.
|Prep time||10 minutes|
|Cooking time||6 hours|
|Finishing time||10 minutes|
Step 1 : Start Sous Vide
Fill water container and turn on Sous Vide at 62 ℃ / 143.5 ℉
Step 2: Prepare lamb
If your leg of lamb has a bone in it, debone the leg. Then add plenty of salt to both sides, and whatever seasoning you want. For this recipe I used a mix of mint, rosemary, garlic powder, black pepper and chili flakes. Use plenty of seasoning.
Step 3: Vacuum pack lamb
Use either your vacuum sealer or the water displacement method.
Step 4: Cook in sous vide
Cook for 6 hours.
Step 1: Brown before serving
On a very hot skillet or pan sear 2 minutes on either side to finish.
Step 2: Rest
Let it rest for 5-10 minutes
Step 3: Cut
Cut in medium thin slices
Step 4: Serve
Serve, I choose to serve it with potato & sweet potato gratin
